Equipment

  • Slow Cooker

  • Skillet

  • Knife

  • Cutting board

  • Measuring cups and spoons

  • Stirring spoon

Ingredients

  • 2 lbs beef chuck, cut into cubes

  • 3 carrots, peeled and sliced

  • 2 potatoes, peeled and diced

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 2 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • 2 tbsp cornstarch

  • Fresh parsley for garnish

Instructions

1

Start by seasoning the beef with salt and pepper.

2

Heat the olive oil in a skillet and brown the beef on all sides.

3

Place the beef in the slow cooker.

4

In the same skillet, sauté onions and garlic till translucent and add them to the slow cooker.

5

Add carrots, potatoes, beef broth, red wine, tomato paste, thyme, and bay leaf to the slow cooker.

6

Cover and cook on low for 8-10 hours or high for 4-6 hours.

7

If thickening, combine cornstarch with water and stir into the stew 30 minutes before it’s done.

8

Once cooked, remove the bay leaf, and garnish with parsley.

9

Serve hot and enjoy!

Notes

I can't emphasize enough the importance of browning the beef. Sear the beef in hot olive oil before adding it to the slow cooker. This enriches the stew with a depth of flavor. Additionally, use quality beef broth as it’s the backbone of this dish. If you'd like to thicken the stew, mix cornstarch with a small amount of water and add it 30 minutes before it’s done. Don’t forget to remove the bay leaf before serving and garnish with fresh parsley for that extra flourish!
