  • a large pot or a Dutch oven

  • a sharp knife

  • a cutting board

  • a stirring spoon


  • 3-4 lbs beef chuck roast

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 4 cloves of garlic, minced

  • 4 carrots, peeled and cut into large chunks

  • 4 stalks of celery, cut into large chunks

  • 4-5 small potatoes, quartered

  • 4 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • Fresh herbs like rosemary and thyme



Season the roast with salt and pepper.


Heat olive oil in a large pot or Dutch oven. Add the roast and sear on all sides until browned. Remove the roast from the pot.


In the same pot, add the onions and garlic and sauté until softened.
