Equipment

  • Large pot

  • Cutting board

  • Knife

  • Measuring cups

  • Stirring spoon

Ingredients

  • 2 cups shredded chicken (preferably from a rotisserie chicken)

  • 1 cup carrots, diced

  • 1 cup celery, chopped

  • 1 medium onion, finely chopped

  • 3 cloves garlic, minced

  • 4 cups chicken broth

  • 2 cups water

  • 1 cup chopped spinach or kale

  • 1/2 teaspoon dried thyme

  • Salt and pepper to taste

  • Fresh parsley for garnish

  • 1 tablespoon olive oil

Instructions

1

In a large pot, heat the olive oil over medium heat. Add the onions, carrots, and celery and cook until they begin to soften, about 5-7 minutes.

2

Add garlic and cook for an additional 30 seconds until fragrant.

3

Pour in the chicken broth and water. Bring to a boil.

4

Add the shredded chicken, dried thyme, salt, and pepper. Reduce heat and let it simmer for about 20 minutes.

5

A few minutes before serving, add the chopped spinach or kale.

6

Garnish with fresh parsley and serve hot.

Notes

It’s essential to keep a few tips in mind. As a chef, I prefer using rotisserie chicken; it saves time and adds depth to the flavor. Don’t shy away from experimenting with herbs – thyme, rosemary, or oregano work beautifully. Also, adding a bay leaf while simmering can elevate the taste. Use a good quality chicken broth; it’s key to a rich and flavorful soup. Lastly, add the spinach or kale towards the end to retain its color and nutrients.
