Ingredients

  • 2 lbs beef chuck, cut into cubes

  • 3 carrots, peeled and sliced

  • 2 potatoes, peeled and diced

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 2 tbsp tomato paste

  • 1 tsp dried thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • 2 tbsp olive oil

  • 2 tbsp cornstarch

  • Fresh parsley for garnish

Instructions

Start by seasoning the beef with salt and pepper.

Heat the olive oil in a skillet and brown the beef on all sides.
