  • Medium mixing bowl

  • Whisk

  • Sifter

  • Non-stick pan or griddle

  • Spatula

  • Measuring cups and spoons

Ingredients

  • 1 cup whole wheat flour

  • 1 tablespoon honey or maple syrup

  • 1 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt

  • 3/4 cup buttermilk

  • 1 large egg

  • 1 ripe banana, mashed

  • 1/2 cup fresh blueberries

  • Butter or coconut oil for cooking

  • Optional toppings: Greek yogurt, additional fruit, or nuts

Instructions

1

In a large bowl, sift together whole wheat flour, baking powder, baking soda, and salt.

2

In another bowl, whisk together the buttermilk, egg, and honey or maple syrup. Add the mashed banana to the wet ingredients.

3

Gradually mix the wet ingredients into the dry ingredients until just combined. Gently fold in the blueberries.

4

Heat a non-stick pan or griddle over medium heat and lightly grease with butter or coconut oil.

5

For each pancake, pour 1/4 cup of batter onto the pan. Cook until bubbles form on the surface, then flip and cook for an additional 1-2 minutes.

6

Serve with your choice of toppings.

Notes

It’s essential to get creative but also be mindful of a few tips. First, sift your dry ingredients; this will result in fluffy pancakes. Opt for ripe bananas; they are sweeter and mash easily. When adding the blueberries, be gentle and avoid over-mixing to keep them intact. Use a non-stick pan or griddle and cook on medium heat. It's the perfect temperature for ensuring a golden-brown exterior while cooking through. Feel free to experiment with toppings – a dollop of Greek yogurt, a drizzle of honey, or a sprinkle of nuts can enhance both taste and nutrition.
