  • A knife for chopping

  • Measuring spoons and cups


  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 2 medium carrots, diced

  • 2 stalks celery, diced

  • 4 cups chopped kale, stems removed

  • 2 cans (15 oz each) white beans, drained and rinsed

  • 4 cups vegetable broth

  • 2 teaspoons fresh thyme, chopped

  • 1 teaspoon fresh rosemary, chopped

  • Salt and pepper to taste

  • Grated Parmesan cheese for garnish (optional)



Start by heating olive oil in a large pot over medium heat.


Add onion, garlic, carrots, and celery to the pot. Cook for about 5-7 minutes, or until the vegetables are softened.
