  • Large and medium mixing bowls

  • Whisk

  • Non-stick skillet or griddle

  • Spatula

  • Measuring cups and spoons

  • 1 cup whole wheat flour

  • 2 teaspoons baking powder

  • 1/2 teaspoon ground cinnamon

  • 1/4 teaspoon ground nutmeg

  • 1/4 teaspoon salt

  • 3/4 cup pumpkin puree

  • 1 cup milk (any variety)

  • 1 egg

  • 2 tablespoons melted butter or coconut oil

  • 1 tablespoon honey or maple syrup

In a large bowl, whisk together the whole wheat flour, baking powder, cinnamon, nutmeg, and salt.

In another bowl, mix pumpkin puree, milk, egg, melted butter or oil, and honey or maple syrup.

Gradually add the wet ingredients to the dry ingredients and stir until just combined.

Let the batter rest for 10 minutes.

Heat a non-stick skillet over medium heat and lightly grease.

Use a 1/4 cup measure to pour batter onto the skillet.

Cook until bubbles form on the surface, then flip and cook until golden brown.

Serve with your favorite toppings such as yogurt, nuts, or additional maple syrup.

Using fresh pumpkin puree can elevate the flavor. To make your own puree, roast pumpkin halves and blend until smooth. For fluffy pancakes, avoid over-mixing the batter as it will deflate the air bubbles. Also, let the batter rest for 10 minutes before cooking. Experiment with spices; cardamom or ginger can be lovely additions. Utilize a mix of flours such as almond or coconut for different textures and flavors.
