  • 1 large chicken breast, cut into bite-size pieces

  • 2 tablespoons olive oil

  • 1 large onion, finely diced

  • 2 cloves garlic, minced

  • 1 large bell pepper, diced

  • 1 cup frozen mixed vegetables (peas, carrots, corn, and green beans)

  • 2 large eggs

  • 3 tablespoons low-sodium soy sauce (or tamari for a gluten-free version)

  • Salt and pepper to taste

  • Chopped green onions and sesame seeds for garnish
