  • A large skillet

  • 1 cup of cooked quinoa or brown rice

  • 1 cup of black beans, cooked or canned

  • 1 avocado, sliced

  • 1 cup of corn kernels

  • 1 cup of chopped bell peppers

  • 1 cup of cherry tomatoes, halved

  • 1 handful of fresh cilantro, chopped

  • 1 lime

  • 1 tablespoon of olive oil

  • Spices: Cumin, paprika, chili powder, salt, and pepper

  • Optional: Cheese, sour cream, or salsa for topping



Start by cooking your quinoa or brown rice according to the package instructions. For extra flavor, cook them in vegetable broth.
