  • a large pot to cook the pasta

  • a blender to make the sauce

  • a large pan to bring it all together

  • a zester for the lemons


  • 200g spaghetti (preferably whole grain)

  • 2 large lemons (zest and juice)

  • 2 cloves garlic, minced

  • 1 cup cashews, soaked and drained

  • 1 cup vegetable broth

  • Salt and pepper to taste

  • Fresh basil for garnish



Cook the spaghetti as per the package instructions until al dente. Drain and set aside.
