  • 250g Penne pasta

  • 200g Fresh spinach leaves

  • 200g Mushrooms, sliced

  • 2 tbsp Olive oil

  • 2 Garlic cloves, minced

  • 1 Onion, finely chopped

  • 200ml Cream (use almond milk for a vegan option)

  • Salt to taste

  • Black pepper to taste

  • Freshly grated Parmesan cheese

  • Fresh basil or parsley for garnish

Instructions

Start by boiling a large pot of water and cook the pasta according to the package instructions until al dente. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until golden.
