  • Large pot

  • Colander

  • Large skillet or frying pan

  • Cooking spoon

  • Knife

  • Grater

  • Measuring cups and spoons


  • 250g Penne pasta

  • 200g Fresh spinach leaves

  • 200g Mushrooms, sliced

  • 2 tbsp Olive oil

  • 2 Garlic cloves, minced

  • 1 Onion, finely chopped

  • 200ml Cream (use almond milk for a vegan option)

  • Salt to taste

  • Black pepper to taste

  • Freshly grated Parmesan cheese

  • Fresh basil or parsley for garnish



Start by boiling a large pot of water and cook the pasta according to the package instructions until al dente. Drain and set aside.


In a large skillet, heat olive oil over medium heat. Add onions and garlic, sauté until golden.


Add mushrooms and cook until they are brown and tender.


Add fresh spinach and cook until wilted.


Lower the heat and stir in the cream. Season with salt and pepper.


Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, add a little reserved pasta water.


Serve hot, garnished with freshly grated Parmesan cheese and a sprinkle of fresh basil or parsley.
