  • Mixing bowl

  • Fork

  • Baking sheet

  • Parchment paper

  • Spoon or cookie scoop

  • Wire rack for cooling

  • 2 ripe bananas

  • 1 cup of oats (old fashioned or quick)

  • Optional: a pinch of cinnamon or your choice of add-ins (nuts, chocolate chips, etc.)

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a mixing bowl, mash the ripe bananas with a fork until smooth.

Stir in the oats until well combined. If using, add cinnamon or your choice of add-ins.

Using a spoon or cookie scoop, drop dollops of the mixture onto the prepared baking sheet. Flatten each dollop into a cookie shape.

Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown.

Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

When preparing these cookies, it’s essential to use ripe bananas as they’re sweeter and easier to mash. For oats, you can use either old-fashioned or quick oats; old-fashioned oats will give a chewier texture whereas quick oats make them softer. Feel free to add a pinch of cinnamon for an extra depth of flavor. If you are using add-ins, make sure to chop them into smaller pieces to ensure even distribution in the cookie batter. Moreover, try experimenting with a mix of nuts and seeds to add a variety of textures.
