  • Oven

  • Baking sheet

  • Parchment paper

  • Large mixing bowl

  • Whisk

  • Knife

  • Peeler (if peeling carrots)

  • Measuring spoons


  • 6 medium-sized carrots

  • 3 tablespoons of honey

  • 2 tablespoons of olive oil

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • A sprinkle of thyme or rosemary (optional)

  • 1 tablespoon of chopped parsley for garnish



Preheat your oven to 400°F (200°C).


Wash the carrots. Peel them if desired.


In a large bowl, whisk together honey, olive oil, salt, pepper, and herbs.


Toss the carrots in the honey mixture until they are well coated.


Place the carrots on a baking sheet lined with parchment paper.
