  • 6 medium-sized carrots

  • 3 tablespoons of honey

  • 2 tablespoons of olive oil

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • A sprinkle of thyme or rosemary (optional)

  • 1 tablespoon of chopped parsley for garnish
