Indian Chicken Curry Recipe Details

Equipment

  • Large frying pan or wok

  • Cutting board

  • Knife

  • Grater

  • Measuring spoons

  • Stirring spoon

Ingredients

  • 500g boneless chicken pieces

  • 2 medium-sized onions, finely chopped

  • 2 tomatoes, pureed

  • 1-inch ginger, grated

  • 3 cloves garlic, minced

  • 2 green chilies, chopped

  • 1 teaspoon cumin seeds

  • 1 teaspoon turmeric powder

  • 1 teaspoon red chili powder

  • 1 teaspoon garam masala

  • 1 tablespoon coriander powder

  • 200 ml coconut milk

  • Fresh coriander leaves

  • Salt to taste

  • 2 tablespoons vegetable oil

Instructions

Heat oil in a large pan and add cumin seeds.

Once they splutter, add onions, ginger, garlic, and green chilies. Saute until the onions turn golden brown.

Add the tomato puree and cook until the oil separates.

Add turmeric, red chili powder, coriander powder, and garam masala. Cook for 2 minutes.

Add the marinated chicken and cook on high heat for 5 minutes.

Add coconut milk and salt. Cover and simmer for 20-25 minutes until the chicken is cooked.

Garnish with fresh coriander leaves.

Notes

Marinate the chicken with ginger-garlic paste and salt for at least 30 minutes before cooking to enhance the flavor. Use freshly ground spices rather than pre-packaged ones for a more authentic taste. Cook the spices in oil until fragrant before adding other ingredients to release their flavors. If you find the curry too spicy, add a dollop of yogurt to balance it out.
