  • A Sharp Knife (for slicing ingredients)

  • A Cutting Board

  • Measuring Spoons and Cups

  • Chicken breasts (4 pieces)

  • Olive oil (2 tbsp)

  • Fresh lime juice (3 tbsp)

  • Ground cumin (1 tsp)

  • Chili powder (1 tsp)

  • Fresh garlic (2 cloves, minced)

  • Salt to taste

  • Mixed greens (4 cups)

  • Cherry tomatoes (1 cup)

  • Avocado (1, sliced)

  • Fresh cilantro (1/4 cup, chopped)

  • Corn kernels (1/2 cup)

  • Black beans (1/2 cup, drained)

  • Queso fresco or feta cheese (1/2 cup)

Mix olive oil, lime juice, cumin, chili powder, minced garlic, and salt in a bowl.

Place the chicken breasts in a ziplock bag and pour the marinade over them. Marinate for 30 minutes.

Preheat the grill on medium-high heat.

Grill the chicken for 6-7 minutes on each side, until fully cooked.

Let the chicken rest for 5 minutes before slicing it.

In a large bowl, mix the mixed greens, cherry tomatoes, avocado, cilantro, corn, and black beans.

Add the sliced chicken on top of the salad.

Sprinkle with queso fresco or feta cheese.

Serve with your favorite dressing or a squeeze of lime.

Marinate the Chicken: Marinate the chicken for at least 30 minutes before grilling. This will help the chicken absorb all the flavors and remain juicy and tender. Use Fresh Ingredients: The freshness of the ingredients is key. Use ripe avocado and fresh greens to ensure a burst of flavors. Let the Grilled Chicken Rest: Once you’ve grilled the chicken, let it rest for about 5 minutes before slicing. This retains the juices inside the chicken. Customize Your Toppings: Feel free to add your favorite toppings like olives or jalapeños to give it a personal touch.
