Ingredients

  • 1 cup quinoa

  • 2 cups water or vegetable broth

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 cup Kalamata olives, pitted and sliced

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh mint, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste

Start by rinsing the quinoa under cold water until the water runs clear.
