  • Medium saucepan

  • Strainer

  • Cutting board

  • Large mixing bowl

  • Whisk

  • Measuring cups and spoons


  • 1 cup quinoa

  • 2 cups water or vegetable broth

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 cup Kalamata olives, pitted and sliced

  • 1/4 cup feta cheese, crumbled

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup fresh mint, chopped

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • Salt and pepper to taste



Start by rinsing the quinoa under cold water until the water runs clear.


In a medium saucepan, combine the quinoa and water or broth. Bring to a boil, then reduce heat and simmer for about 15 minutes, or until quinoa is cooked and fluffy.


While the quinoa is cooking, chop the tomatoes, cucumber, and olives, and crumble the feta cheese.


In a large bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.


Once the quinoa is cooked, let it cool for a few minutes and then add it to the bowl with the dressing.
