  • 1 cup old-fashioned oats

  • 3/4 cup whole wheat flour

  • 1 1/2 teaspoons baking powder

  • 1/4 teaspoon salt

  • 1/4 cup unsalted butter, melted

  • 1/2 cup natural peanut butter

  • 1/4 cup honey or maple syrup

  • 1 large egg

  • 1 teaspoon vanilla extract

  • Optional: Chocolate chips, nuts, or dried fruit for mix-ins



Preheat your oven to 350°F (175°C), and line a baking sheet with parchment paper.


In a medium bowl, whisk together the oats, whole wheat flour, baking powder, and salt.


In another bowl, combine the melted butter, peanut butter, honey or maple syrup, egg, and vanilla extract.


Gradually add the dry ingredients to the wet mixture and stir until just combined. If using, fold in chocolate chips, nuts, or dried fruit.


Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheet. Flatten slightly with the back of the spoon.
