  • 1 medium onion, thinly sliced

  • 2 garlic cloves, minced

  • 1 cup cherry tomatoes, halved

  • 1/2 cup Kalamata olives, pitted

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • Salt and black pepper to taste

  • A handful of fresh basil for garnish

  • Feta cheese for serving

  • Lemon wedges for serving

Instructions

1

Start by heating the olive oil in a large skillet over medium-high heat.

2

Add the chicken breasts and cook for about 5-7 minutes on each side, until golden brown.

Remove and set aside.

4

In the same skillet, add the bell peppers and onion. Sauté for about 5 minutes until they start to soften.

5

Add the garlic, cherry tomatoes, olives, oregano, and thyme. Cook for another 2-3 minutes.

6

Return the chicken to the skillet, nestling it amongst the vegetables.

7

Cook everything together for an additional 5-7 minutes, until the chicken is cooked through.

8

Season with salt and pepper to taste.

9

Garnish with fresh basil, crumbled feta cheese, and serve with lemon wedges on the side.

Notes

I would like to share some tips for perfecting this recipe. Marinate the chicken with salt, pepper, and a little lemon juice for at least 30 minutes before cooking. This enhances the flavor and tenderizes the meat. Use a cast-iron skillet if available, as it conducts heat evenly and adds depth to the dish. Don't overcrowd the skillet; give ingredients space to cook evenly. Lastly, feel free to add other Mediterranean ingredients like artichokes or capers for a twist.
