Equipment

  • a food processor or blender

  • a mixing bowl

  • a grill

  • a meat thermometer

  • a kitchen knife

Ingredients

  • 4 bone-in chicken breasts

  • 2 tablespoons of allspice

  • 1 tablespoon of thyme

  • 1 teaspoon of cinnamon

  • 1 teaspoon of cayenne pepper

  • 2 teaspoons of salt

  • 1 teaspoon of black pepper

  • 5 cloves of garlic, minced

  • 1 onion, chopped

  • 3 scallions, chopped

  • 2 Scotch bonnet peppers, seeded and chopped

  • 1/4 cup of soy sauce

  • 1 tablespoon of brown sugar

  • Juice of one lime

  • 1/4 cup of vegetable oil

Instructions

1

Combine all the spices, salt, black pepper, garlic, onion, scallions, Scotch bonnet peppers, soy sauce, brown sugar, lime juice, and vegetable oil in a food processor or blender. Blend until you have a smooth paste.

2

Rub this marinade all over the chicken breasts, making sure to get under the skin. Leave the chicken to marinate in the refrigerator for at least 4 hours or, ideally, overnight.

3

Preheat your grill to a medium-low heat. Grill the chicken for about 25-30 minutes on each side, or until the internal temperature reaches 165°F. Be sure to turn the chicken frequently to prevent burning.

4

Allow the chicken to rest for a few minutes before serving to let the juices redistribute. Enjoy!

Notes

Perfecting the jerk chicken comes with understanding your ingredients and the process. It's more than just following the recipe—it's knowing why each step matters. First, be sure to marinate the chicken for at least 4 hours. This allows the meat to absorb all the flavors, making each bite more delicious. When cooking, remember that slow and steady wins the race. Grilling the chicken at a lower temperature for a longer period helps retain the juices. Lastly, don't skimp on the spices—they are the heart of this dish. The more you understand and appreciate each component, the more delectable your jerk chicken will be.
