  • 500 grams of boneless, skinless chicken breasts

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 2 cloves of garlic, minced

  • 1 red bell pepper, chopped

  • 400 grams of canned tomatoes

  • 400 grams of canned kidney beans, drained

  • 2 teaspoons chili powder

  • 1 teaspoon ground cumin

  • Salt and pepper to taste

  • Fresh coriander for garnish
