  • 8 large eggs

  • Salt and pepper to taste

  • 1/4 cup milk or cream

  • 2 tablespoons olive oil

  • 1 small onion, finely chopped

  • 2 cloves garlic, minced

  • 2 cups assorted fresh vegetables (e.g., bell peppers, zucchini, tomatoes, spinach)

  • 1/4 cup grated cheese (such as feta or cheddar)

  • Fresh herbs for garnish (e.g., basil, parsley)



Preheat your oven to 375°F (190°C).


In a bowl, whisk together the eggs, milk or cream, salt, and pepper. Set aside.


Heat olive oil in an ovenproof skillet over medium heat. Add the onions and garlic, and sauté until softened.
