  • a mandoline slicer (optional)

  • a colander

  • a mixing bowl

  • a baking dish

  • aluminum foil


  • 2 large eggplants, thinly sliced lengthwise

  • 2 cups ricotta cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup grated Parmesan cheese

  • 1 egg

  • 2 cups marinara sauce

  • 1/4 cup fresh basil leaves

  • 2 cloves garlic, minced

  • Salt and pepper to taste



Preheat your oven to 375°F (190°C).


While the oven is preheating, salt the eggplant slices and let them rest for 15 minutes. Rinse and pat dry.


In a bowl, mix ricotta cheese, egg, minced garlic, and some basil. Season with salt and pepper.


Layer your baking dish starting with marinara sauce, followed by eggplant slices, ricotta mixture, and mozzarella. Repeat this process until all ingredients are used, finishing with a layer of sauce and a sprinkle of Parmesan.


Cover with foil and bake for 25 minutes. Remove the foil and bake for another 10-15 minutes until golden brown. Let it cool for a few minutes before serving.
