Equipment

  • Large pot

  • Knife

  • Cutting board

  • Wooden spoon

  • Measuring cups and spoons

Ingredients

  • 2 tablespoons olive oil

  • 1.5 pounds boneless, skinless chicken breasts, cut into chunks

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 medium carrots, sliced

  • 2 celery stalks, sliced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 tablespoons all-purpose flour

  • 1 teaspoon thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • Fresh parsley for garnish

Instructions

1

Start by heating olive oil in a large pot over medium heat.

2

Add chicken pieces, and cook until golden brown. Remove and set aside.

3

In the same pot, sauté onions and garlic until fragrant.

4

Add carrots and celery, cook for 5 minutes.

5

Sprinkle flour over the vegetables and stir.

6

Gradually add chicken broth, while stirring.

7

Add thyme, bay leaf, salt, and pepper.

8

Bring to a simmer, and let it cook for 10 minutes.

9

Add chicken back to the pot, along with the heavy cream.

10

Cook for an additional 10-15 minutes or until the chicken is cooked through.

11

Remove the bay leaf, garnish with fresh parsley, and serve hot.

Notes

Searing the chicken pieces until golden before adding to the stew enhances flavor. Use a combination of root vegetables for more depth in taste. For a thicker stew, you can add a cornstarch slurry (mix equal parts of cornstarch and water) towards the end of cooking. Fresh herbs like thyme, rosemary, and parsley complement the creamy texture with a refreshing taste.
