  • Large pot

  • Measuring cups and spoons


  • 2 tablespoons olive oil

  • 1.5 pounds boneless, skinless chicken breasts, cut into chunks

  • 1 onion, finely chopped

  • 3 cloves garlic, minced

  • 2 medium carrots, sliced

  • 2 celery stalks, sliced

  • 4 cups chicken broth

  • 1 cup heavy cream

  • 2 tablespoons all-purpose flour

  • 1 teaspoon thyme

  • 1 bay leaf

  • Salt and pepper to taste

  • Fresh parsley for garnish



Start by heating olive oil in a large pot over medium heat.


Add chicken pieces, and cook until golden brown. Remove and set aside.


In the same pot, sauté onions and garlic until fragrant.


Add carrots and celery, cook for 5 minutes.


Sprinkle flour over the vegetables and stir.


Gradually add chicken broth, while stirring.


Add thyme, bay leaf, salt, and pepper.


Bring to a simmer, and let it cook for 10 minutes.


Add chicken back to the pot, along with the heavy cream.
