Notes

For a flavorful casserole, consider using homemade enchilada sauce. It’s simple and you can control the spice levels. When assembling the casserole, layer ingredients evenly to ensure every bite is as good as the last. For the chicken, try using a mix of breast and thigh meat for the best texture. Add a dash of lime juice for that extra zing. Lastly, let the casserole sit for a few minutes before serving; this allows the flavors to meld together.
