  • 3 cups shredded cooked chicken

  • 2 cups enchilada sauce

  • 1 cup shredded cheese (Mexican blend)

  • 1 cup black beans, rinsed and drained

  • 1 cup corn kernels

  • 12 small corn tortillas

  • Fresh cilantro for garnish

  • 1 diced avocado

  • 1 diced tomato

  • 1 chopped green onion



Preheat your oven to 375°F (190°C).


In a large bowl, mix the shredded chicken with half of the enchilada sauce.


In a casserole dish, lay down six tortillas, then layer with half of the chicken mixture, half of the beans, half of the corn, and half of the cheese.


Repeat the layers, ending with cheese on top.


Bake in the preheated oven for 25-30 minutes until the cheese is melted and bubbly.
