  • 2 medium-sized eggplants, sliced

  • Salt, for drawing out moisture from the eggplants

  • 2 cups marinara sauce

  • 2 cups shredded mozzarella cheese

  • 1 cup grated Parmesan cheese

  • 1 cup bread crumbs

  • 2 eggs, beaten

  • Olive oil for brushing

  • Fresh basil for garnish



Preheat your oven to 375°F (190°C).


Salt the eggplant slices and let them sit for 30 minutes. Rinse and pat dry.


Dip eggplant slices into beaten eggs, then coat with breadcrumbs.


Place on a baking sheet, brush with olive oil, and bake for 25 minutes, turning once.
