Equipment

  • A large frying pan or wok

  • A sharp knife

  • Cutting board

  • Stirring spoon

  • Measuring spoons

Ingredients

  • 400g chicken breast or thighs, finely sliced

  • 1 cup Thai basil leaves

  • 3-4 cloves of garlic, minced

  • 2-3 Thai bird’s eye chilies, finely chopped

  • 2 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • 1 teaspoon sugar

  • 2 tablespoons vegetable oil

  • Cooked jasmine rice for serving

Instructions

Heat oil in a large pan over medium-high heat.

Add the garlic and chilies, sauté for about 30 seconds until fragrant.

Add the chicken and cook until it’s no longer pink.

Mix in the oyster sauce, soy sauce, and sugar. Cook for another 1-2 minutes.

Finally, toss in the Thai basil leaves and cook for an additional 30 seconds.

Serve immediately over jasmine rice.

Notes

Use Fresh Basil: Thai basil is key. It has a different flavor than regular basil. If you can’t find it, use the regular but it won't be as authentic. Balance Your Flavors: The beauty of Thai food is in balancing sweet, salty, and spicy. Taste as you go and adjust the sauces accordingly.
