Equipment

  • A large mixing bowl

  • A sharp knife

  • A cutting board

  • A measuring cup

  • A spoon for mixing

Ingredients

  • 1 lb of raw shrimp, peeled and deveined

  • 1 cup of lime juice (about 8 limes)

  • 1/2 cup of lemon juice (about 2 lemons)

  • 1 medium red onion, thinly sliced

  • 1 cup of chopped tomatoes

  • 1 jalapeño, seeded and minced

  • 1/2 cup of chopped cilantro

  • Salt and pepper to taste

  • 1 avocado, diced (optional)

  • Tortilla chips for serving (optional)

Instructions

In a large bowl, combine shrimp with lime and lemon juices. Make sure the shrimp are submerged. Cover and refrigerate for 15-20 minutes.

While the shrimp are marinating, prepare your other ingredients: slice the onion, chop the tomatoes, mince the jalapeño, and chop the cilantro.

Once shrimp are opaque and ‘cooked’ through, drain off half of the citrus juices.

Mix in red onion, tomatoes, jalapeño, and cilantro. Season with salt and pepper.

If using avocado, gently stir it in now.

Secondly, marinate the shrimp in citrus juices for at least 15-20 minutes to ‘cook’ them. During this time, the acid from the citrus will essentially cook the shrimp.
