  • A large mixing bowl

  • A smaller bowl for preparing the dressing

  • A whisk or a fork to mix the dressing

  • A sharp knife and chopping board

  • A can opener if using canned chickpeas


  • 1 can of chickpeas, rinsed and drained

  • 1 large cucumber, diced

  • 2 large tomatoes, diced

  • 1 medium red onion, finely chopped

  • 1/2 cup of fresh parsley, finely chopped

  • 1/2 cup of fresh mint, finely chopped

  • Juice of 1 lemon

  • 3 tablespoons of extra virgin olive oil
