Equipment

  • Large Pan

  • Spatula

  • Cutting Board

  • Knife

  • Mixing Bowls

  • Measuring Cups

Ingredients

  • 8 medium flour tortillas

  • 400g shrimps, peeled and deveined

  • 1 cup shredded low-fat cheese

  • 1 bell pepper, thinly sliced

  • ½ onion, thinly sliced

  • 1 avocado, sliced

  • 1 tomato, diced

  • Fresh coriander (cilantro)

  • Lime wedges

  • Olive oil for frying

  • Spices: ground cumin, paprika, salt, pepper

Instructions

1

Start by heating a large pan over medium heat and adding a little olive oil.

2

Add the shrimp and cook for 2-3 minutes on each side or until they are pink and opaque. Remove them from the pan and set aside.

3

In the same pan, add a little more oil if needed, and sauté the bell pepper and onion until they are soft and slightly caramelized.

4

Take a tortilla and layer it with cheese, shrimp, bell pepper, onion, avocado slices, diced tomatoes, and fresh coriander.

5

Place another tortilla on top and transfer it to the pan.

6

Cook for 2-3 minutes on each side or until the tortilla is crispy and the cheese has melted.

7

Repeat for the remaining tortillas and ingredients.

8

Serve hot with lime wedges on the side.

Notes

I would recommend seasoning the shrimp with a mix of ground cumin, paprika, salt, and pepper for an extra kick. Make sure not to overcook the shrimp as they can become rubbery. Using low-fat cheese can be an excellent way to keep the quesadilla flavorful while cutting down on calories. To ensure even cooking, use a large pan and do not overcrowd it with ingredients. Feel free to add hot sauce or jalapenos if you like it spicy!
