Equipment

  • Grill or grilling pan

  • Mixing bowl

  • Skewers (wooden or metal)

  • Brush for oil

  • Knife and chopping board

Ingredients

  • 500 grams of minced chicken

  • 1 large onion, finely chopped

  • 2 tablespoons of fresh parsley, finely chopped

  • 2 teaspoons of ground cumin

  • 1 teaspoon of ground coriander

  • Salt and pepper to taste

  • Wooden or metal skewers

  • Olive oil for brushing

  • Optional: bell peppers and cherry tomatoes for garnish

Instructions

1

In a large bowl, mix the minced chicken, onion, parsley, cumin, coriander, salt, and pepper.

2

Cover and refrigerate for at least 2 hours.

3

Preheat the grill to medium-high heat.

4

Shape the chicken mixture into elongated ovals and thread onto skewers.

5

Lightly brush the kabobs with olive oil.

6

Grill for 6-8 minutes on each side or until cooked through.

7

If using, thread bell peppers and cherry tomatoes on separate skewers and grill them.

8

Serve hot with pita bread and your favorite dipping sauce.

Notes

Soak wooden skewers in water for 30 minutes before use to prevent them from burning. Marinate the chicken mixture for at least 2 hours in the refrigerator to allow the flavors to meld together. Use flat skewers if possible, as they will prevent the meat from rotating when you are turning them.
