Equipment

  • Food processor or blender

  • Measuring cups and spoons

  • Skillet

  • Spatula

  • Airtight container for storage

Ingredients

  • 2 cups fresh basil leaves

  • 1/2 cup grated Parmesan cheese

  • 1/2 cup extra virgin olive oil

  • 1/3 cup pine nuts

  • 3 garlic cloves

  • Salt and black pepper to taste

  • Lemon juice (optional)

Instructions

1

Start by washing the basil leaves thoroughly and pat them dry.

2

Toast the pine nuts on a dry skillet over medium heat for 3-5 minutes, until golden.

3

In a food processor, combine the basil leaves, pine nuts, garlic cloves, and half of the olive oil. Pulse until coarsely chopped.

4

Add the Parmesan cheese, salt, and pepper, and pulse while drizzling in the remaining olive oil until well combined.

5

Taste the pesto, and adjust seasoning as needed. You can also add a few drops of lemon juice if desired.

6

Your homemade pesto sauce is ready! Store it in an airtight container in the refrigerator.

Notes

Using the freshest ingredients is key. Pick vibrant green basil leaves and high-quality Parmesan cheese. Lightly toast the pine nuts until golden, to release their flavors. When adding the olive oil, do it gradually; this allows you to control the consistency of your pesto. Don’t over-process the ingredients; it’s nice to have a slightly coarse texture. Finally, adding a dash of lemon juice can brighten up the flavors.
