Notes

I recommend rinsing the quinoa thoroughly before cooking to remove any bitterness. Opt for a low-sodium broth to cook the quinoa for an added layer of flavor. When chopping vegetables, try to keep them uniform in size for even distribution of flavors. Don’t shy away from adding a dash of dried herbs such as oregano or thyme to enhance the Greek essence. For the dressing, use a high-quality extra virgin olive oil and fresh lemon juice to elevate the taste. Letting the salad sit for a few minutes before serving will allow the flavors to meld together beautifully.
