  • Baguette or ciabatta bread

  • Fresh tomatoes

  • Garlic cloves

  • Fresh basil leaves

  • Extra virgin olive oil

  • Salt and freshly ground black pepper

  • Optional: Balsamic vinegar, mozzarella

Preheat your oven to 400°F (200°C).

Slice the bread into ½-inch thick pieces.

Peel and halve the garlic cloves. Rub them on the bread slices.

Chop the tomatoes and basil.

Place bread slices on a baking sheet, drizzle with olive oil, and toast in the oven for about 5-6 minutes until golden.

In a bowl, combine the chopped tomatoes, basil, salt, and pepper. Mix well.

Once the bread is toasted, spoon the tomato mixture onto each slice.

Optional: Add mozzarella and place back in the oven until cheese melts.

Drizzle with more olive oil or balsamic vinegar if desired.

Serve immediately.

Quality bread is essential; choose a good baguette or ciabatta. Opt for ripe tomatoes as they are juicier and more flavorful. Don't shy away from garlic; it's the heart of this dish. Additionally, don’t go light on fresh basil - not only does it add flavor, but it also brings an incredible aroma to the dish. If you want to add an extra zing, drizzle some balsamic vinegar over the top before serving. Lastly, make sure your olive oil is of high quality, as it binds all the flavors together.
