  • a large bowl

  • a spoon or spatula for mixing

  • some cling wrap for refrigeration

  • 1 1/2 cups gluten-free oat flour

  • 1/2 cup almond butter

  • 1/3 cup maple syrup

  • 1/4 cup coconut oil (melted)

  • 1 teaspoon pure vanilla extract

  • 1/2 teaspoon sea salt

  • 1/2 cup mini dairy-free chocolate chips

In a large bowl, combine oat flour, almond butter, maple syrup, melted coconut oil, vanilla extract, and sea salt. Stir until the mixture is well combined and forms a dough-like consistency.

Fold in the mini chocolate chips, making sure they're evenly distributed throughout the dough.

Cover the bowl with cling wrap and chill in the refrigerator for at least 2 hours.

Once chilled, you can either roll the dough into bite-sized balls or enjoy it straight from the bowl with a spoon!

This cookie dough recipe is simple, but there are a few tips to ensure perfection. First, always use high-quality gluten-free oat flour for the best texture and taste. If you can't find it, you can make your own by blending gluten-free oats in a food processor until they reach a fine texture. Second, while almond butter adds creaminess, it also works as a binding agent; however, you can substitute it with sunflower seed butter for a nut-free version. Lastly, don't forget to melt the coconut oil before using it to ensure a smooth dough, and always chill the dough before consuming for the best taste.
