  • A large pot for boiling potatoes

  • A colander for draining

  • A potato masher

  • A large skillet or frying pan

  • A knife and cutting board

  • A baking dish

  • A spatula or spoon for mixing and spreading


  • 4 large potatoes, peeled and cubed

  • 1 cup chopped carrots

  • 1 cup frozen peas

  • 1 cup chopped mushrooms

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon thyme

  • 1 teaspoon rosemary

  • Salt and pepper to taste

  • 1 cup vegetable broth

  • 2 tablespoons tomato paste

  • 1/4 cup milk

  • 2 tablespoons butter



Preheat your oven to 375°F (190°C).


Boil the potatoes until tender. Drain and mash them with butter and milk until creamy. Season with salt and pepper.


In a large skillet, heat olive oil over medium heat. Add onions and garlic and sauté until softened.


Add carrots, peas, mushrooms, thyme, rosemary, salt, and pepper. Cook for about 10 minutes, or until vegetables are tender.


Stir in vegetable broth and tomato paste. Simmer for another 5 minutes.


Transfer the vegetable mixture to a baking dish.


Spread the mashed potatoes evenly over the vegetables.


Bake in the preheated oven for 25-30 minutes, until the top is golden brown.


Choosing the right potatoes is vital; Russet or Yukon Gold potatoes are great for mashing. When preparing vegetables, cut them into even sizes for uniform cooking. Fresh herbs such as thyme and rosemary enhance the flavor. For a creamy mash, add a dash of cream or a dollop of Greek yogurt. Additionally, letting the pie rest for a few minutes after baking helps set the filling, making it easier to serve.
