  • 1 cup heavy cream

  • 1/2 cup sun-dried tomatoes

  • 3 cups baby spinach

  • 1/2 cup grated Parmesan cheese

  • Zest and juice of 1 lemon



Begin by seasoning your salmon fillets with salt and pepper on both sides. Heat the olive oil in a large pan over medium-high heat.


Sear the salmon fillets for about 4 minutes on each side or until golden brown. Remove the salmon and set aside.
