Equipment

  • Large sauté pan or skillet

  • Knife

  • Cutting board

  • Stirring spoon

  • Measuring cups and spoons

Ingredients

  • 500g fresh mushrooms (button or cremini)

  • 2 tablespoons butter

  • 1 tablespoon olive oil

  • 2 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup heavy cream

  • Salt and pepper to taste

  • Fresh parsley for garnish

  • Grated Parmesan cheese (optional)

Instructions

1

Clean the mushrooms and slice them evenly.

2

Heat a large pan over medium-high heat and add butter and olive oil.

3

Once the butter melts, add the garlic and onion. Sautee until they become translucent.

4

Add the mushrooms and cook for about 5-7 minutes until they are browned and have released their moisture.

5

Lower the heat and add the heavy cream, salt, and pepper. Simmer for another 2-3 minutes until the sauce thickens.

6

Remove from heat, garnish with fresh parsley and optional Parmesan cheese.

7

Serve hot with rice, pasta, or as a side dish.

Notes

Using fresh mushrooms is key. Clean them by gently wiping with a damp cloth. Do not wash them as they absorb water. Sautee them on high heat to allow caramelization which unlocks their flavors. Opt for heavy cream for a rich texture but if you prefer a lighter version, half-and-half works well. Add grated parmesan for an extra punch of flavor. Don’t forget to season as you go, this builds layers of flavor. Lastly, freshly chopped parsley not only adds color but a burst of freshness too.
