Equipment

  • a large skillet or frying pan with a lid

  • a cutting board

  • a knife for chopping

  • a spatula or spoon for stirring

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper to taste

  • 2 tablespoons of olive oil

  • 3 cloves of garlic, minced

  • 1 can (14 oz) of diced tomatoes

  • 1/2 cup of Kalamata olives, pitted and halved

  • 2 tablespoons of capers, drained

  • 1 teaspoon of dried oregano

  • 1/4 teaspoon of red pepper flakes

  • Fresh basil or parsley for garnish

Season both sides of the chicken breasts with salt and pepper.
