Equipment

  • Large pan or skillet

  • Mixing bowl

  • Measuring spoons and cups

  • Knife and cutting board

Ingredients

  • 500g boneless chicken

  • 1 cup tomato puree

  • 1 cup heavy cream

  • 2 tablespoons unsalted butter

  • 1 onion, finely chopped

  • 2 teaspoons ginger garlic paste

  • 1 teaspoon garam masala

  • 1 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon red chili powder (adjust to taste)

  • Salt to taste

  • Fresh coriander for garnish

  • 1 teaspoon dried fenugreek leaves (Kasuri Methi)

Instructions

1

Start by marinating the chicken in ginger garlic paste, turmeric, cumin, and chili powder for at least 30 minutes.

2

In a large pan, melt the butter and sauté onions until golden brown.

3

Add the marinated chicken to the pan and cook until it's no longer pink.

4

Add the tomato puree and cook for an additional 5 minutes.

5

Lower the heat, then stir in the heavy cream.

6

Add garam masala and salt to taste.

7

Garnish with fresh coriander and sprinkle the dried fenugreek leaves.

8

Serve hot with naan or rice.

Notes

Marinating the chicken in a spice mix with yogurt before cooking can make it more tender and flavorful. When you sauté the onions, be patient and let them cook until they're golden brown; this will add depth to the sauce. While adding the heavy cream, lower the heat to prevent it from curdling. Finally, finishing the dish with dried fenugreek leaves enhances the aroma and gives the dish its characteristic flavor.
