Ingredients

  • 2 cans of black beans (drained and rinsed)

  • 2 cups of shredded cheese (preferably a mix of cheddar and Monterey Jack)

  • 1 red bell pepper (finely chopped)

  • 1 green bell pepper (finely chopped)

  • 1 onion (finely chopped)

  • 2 cloves of garlic (minced)

  • 2 cups of enchilada sauce

  • 8 flour tortillas

  • Olive oil, salt, and pepper to taste

  • Optional: Fresh cilantro and sour cream for garnish

Preheat your oven to 375°F (190°C). Meanwhile, heat olive oil in a skillet, add onions and bell peppers. Cook until softened.

Add minced garlic and black beans to the skillet. Stir until well combined. Season with salt and pepper.
