Ingredients

  • 500g lean ground beef

  • 1 large onion, chopped

  • 2 cloves garlic, minced

  • 1 bell pepper, any color, chopped

  • 1 can (400g) red kidney beans, drained and rinsed

  • 1 can (400g) diced tomatoes

  • 2 tablespoons chili powder

  • 1 teaspoon cumin

  • Salt and pepper to taste

  • Olive oil for cooking

  • Optional: Fresh coriander, grated cheese, and sour cream for garnish

Instructions

Heat a large pot over medium heat and add a drizzle of olive oil.

Add the ground beef and cook until browned. Remove the beef and set it aside.

In the same pot, add a bit more olive oil, then add onions and garlic. Cook until they are soft and golden.

Add the bell pepper to the pot and cook for another 5 minutes.

Return the beef to the pot, add chili powder, cumin, salt, and pepper. Stir well.

Add the kidney beans and diced tomatoes (with their juice) to the pot. Bring everything to a simmer.

First, choose lean ground beef for less fat. Browning the meat properly is essential - don’t just cook it, brown it for that deep flavor. Use fresh garlic and onion as they are flavor fundamentals.
