  • Large frying pan or skillet

  • Spatula

  • Zester

  • Measuring spoons


  • 500g boneless chicken breast, cut into pieces

  • 1 can (400ml) coconut milk

  • 2 tablespoons olive oil

  • 1 onion, finely chopped

  • 2 cloves garlic, minced

  • 1 teaspoon ginger, grated

  • 1 tablespoon curry powder

  • Salt to taste

  • Fresh coriander for garnish

  • 1 lime for zest and juice



Start by marinating the chicken in lime juice, curry powder, and salt for 15 minutes.


Heat the olive oil in a pan over medium heat.


Add onions to the pan and cook until golden brown, about 5 minutes.
