  • a baking dish

  • a mixing bowl

  • a grater (for lemon zest)

  • a kitchen knife


  • 4 salmon fillets

  • 2 tablespoons of olive oil

  • 1 lemon (zest and juice)

  • 4 cloves of garlic, minced

  • 1 teaspoon of dried oregano

  • 1 teaspoon of dried basil

  • Salt and black pepper to taste

  • A handful of cherry tomatoes

  • A bunch of fresh parsley, chopped



Preheat your oven to 400°F (200°C).


In a bowl, combine olive oil, lemon zest, lemon juice, garlic, oregano, basil, salt, and pepper.


Place the salmon fillets in a baking dish and pour the marinade over them. Let them sit for 30 minutes.


Scatter cherry tomatoes around the salmon in the baking dish.
