Equipment

  • Large pot

  • Skillet

  • Baking dish

  • Oven

  • Potato masher

  • Knife and cutting board

  • Mixing bowl

Ingredients

  • 4 large sweet potatoes

  • 1 lb lean ground turkey or beef

  • 1 onion, diced

  • 2 carrots, diced

  • 1 cup frozen peas

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 1 tsp thyme

  • Salt and pepper to taste

  • ½ cup low-fat milk

  • 2 tbsp butter

Instructions

1

Preheat your oven to 375 degrees F (190 degrees C).

2

Peel and cut sweet potatoes into chunks. Boil them until tender, then drain.

3

While the sweet potatoes are boiling, heat olive oil in a large skillet. Add onions, carrots, and cook until they start to soften.

4

Add garlic, ground meat, and thyme. Cook until the meat is browned.

5

Add peas, and season with salt and pepper.

6

In a large bowl, mash the sweet potatoes with milk, butter, and a pinch of salt.

7

In a baking dish, layer the meat mixture, then top with the mashed sweet potatoes.

8

Bake for 25-30 minutes, until the top is golden.

Notes

Seasoning is key! Season your meat well and don't shy away from herbs like rosemary or oregano. Sweet potatoes can be quite sweet, so a generous pinch of salt when mashing helps balance the flavors. Additionally, if you want a creamier texture, you can use Greek yogurt instead of milk for mashing the sweet potatoes. Lastly, give the pie a nice golden top by broiling it for the last 3-5 minutes.
