Equipment

  • Large saucepan or deep skillet

  • Wooden spoon for stirring

  • Ladle for adding broth

  • Knife and chopping board

  • Cheese grater

  • Measuring cups and spoons

Ingredients

  • 1½ cups Arborio rice

  • 4 cups chicken or vegetable broth

  • 1 lb shrimp, peeled and deveined

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped

  • ½ cup white wine (optional)

  • ½ cup grated Parmesan cheese

  • 2 tbsp butter

  • 2 tbsp olive oil

  • Salt to taste

  • Freshly ground black pepper

  • Chopped parsley for garnish

Instructions

1

Start by heating the butter and olive oil in a large saucepan over medium heat.

2

Add the chopped onion and cook until translucent, about 5 minutes.

3

Add the garlic and cook for another minute.

4

Stir in the Arborio rice and cook for 2-3 minutes to toast it lightly.

5

If using, add the wine and cook until absorbed.

6

Gradually add the broth one cup at a time, stirring continuously until the liquid is absorbed before adding more.

7

When the rice is almost cooked, add the shrimp, and cook until they turn pink.

8

Remove from heat, stir in the grated Parmesan, and season with salt and black pepper.

9

Garnish with chopped parsley and serve immediately.

Notes

Use fresh, good-quality shrimp as it’s the star ingredient. Arborio rice is crucial for achieving the desired creamy texture. You can use either chicken or vegetable broth; however, using homemade broth takes the flavor to another level. Toast the rice slightly before adding the broth, it enhances the nuttiness. Gradually add the broth, stirring constantly, to develop creaminess. For the wine, go with a dry white like Pinot Grigio. Don’t skip the Parmesan; it adds a savory depth. And finally, don’t forget to season it well.
