  • Large pot or Dutch oven

  • Sharp knife

  • Cutting board

  • 1 kg beef chuck, cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 large onion, diced

  • 3 cloves garlic, minced

  • 3 carrots, peeled and chopped

  • 3 potatoes, peeled and cubed

  • 4 cups beef broth

  • 1 cup red wine (optional)

  • 2 teaspoons salt

  • 1 teaspoon black pepper

  • 2 tablespoons fresh thyme

  • 2 tablespoons fresh rosemary

  • 2 tablespoons cornstarch (optional, for thickening)



Heat the olive oil in a large pot over medium heat. Add the beef and brown on all sides, then remove and set aside.


In the same pot, add the onions and garlic. Sauté until soft and fragrant.


Return the beef to the pot, add the carrots, potatoes, beef broth, wine (if using), salt, and pepper. Stir well.


Bring the mixture to a simmer, then reduce the heat to low and cover. Cook for about 2 hours, until the beef is tender.
