Equipment

  • a good-quality large skillet or frying pan

  • a spatula or tongs

  • a grater

  • a knife

  • a chopping board

Ingredients

  • 4 boneless, skinless chicken breasts

  • Salt and black pepper for seasoning

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • 1 cup chicken broth

  • 1/2 cup heavy cream

  • Zest and juice of one lemon

  • 1 teaspoon freshly ground black pepper

  • 1 tablespoon chopped fresh parsley

Instructions

1

Season chicken breasts with salt and pepper.

2

Heat olive oil in a large skillet over medium heat, add chicken, and cook until browned and cooked through. Remove chicken from skillet and set aside.

3

In the same skillet, add minced garlic and cook until fragrant.

4

Deglaze the pan with chicken broth, scraping any browned bits from the bottom of the pan.

5

Stir in heavy cream, lemon juice, and freshly ground black pepper. Allow the sauce to simmer until it begins to thicken.

6

Return the chicken to the skillet, coat with the sauce, and simmer for another 2-3 minutes.

7

Finish with lemon zest and fresh parsley.

Notes

Always season your chicken well. Salt and pepper are essential, but don't shy away from other spices like paprika or cayenne for a touch of heat. Cook the chicken over medium heat. Too hot, and it might burn; too low, and it could be undercooked. Medium heat ensures the chicken is cooked perfectly inside and out. Don't forget to deglaze the pan with the broth. This process lifts the brown bits stuck to the bottom of the pan, which are full of flavor. Add the lemon zest at the end. Lemon zest is volatile and can lose its flavor if cooked for too long. Lastly, use fresh ingredients wherever possible. The taste difference is remarkable.
