  • Mixing bowl

  • Measuring spoons

  • Paper towels

  • Heavy skillet (preferably cast iron)

  • Spatula

Ingredients

  • 4 salmon fillets

  • 2 tablespoons of olive oil

  • 1 teaspoon paprika

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder

  • 1/2 teaspoon cayenne pepper

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon salt

  • 1/2 teaspoon thyme

  • 1/2 teaspoon oregano

  • Lemon wedges, to serve

Instructions

1

Combine paprika, onion powder, garlic powder, cayenne pepper, black pepper, salt, thyme, and oregano in a small bowl.

2

Pat dry the salmon fillets with paper towels. Rub them with olive oil and the spice blend on all sides.

3

Preheat a heavy skillet over medium heat, then add the salmon, skin-side down. Cook for 5 minutes.

4

Flip the salmon and cook for another 3-5 minutes, until the fish flakes easily with a fork.

5

Serve the blackened salmon with lemon wedges.

Notes

Always start with a dry salmon fillet. Patting it dry with paper towels helps the spices stick better and promotes even cooking. Don’t skimp on the spice blend. It's what gives the salmon its blackened, flavorful crust. Use a heavy skillet, preferably cast iron, that can withstand high heat. Don't rush the cooking process. The salmon should be cooked over medium heat to allow the inside to get done without burning the outside. Allow the salmon to rest a bit before serving. It continues to cook from residual heat, ensuring it’s perfectly done.
