Our take on this classic Italian dish is a healthier version, which ensures that you do not compromise on taste while keeping a check on your nutrition. Let’s dive into the reasons behind the popularity of this dish and the secrets to make it healthier.

Why Do People Love Cooking This Recipe?

The allure of Chicken Fettuccine Alfredo lies in its perfect combination of texture and taste. The velvety sauce comforts the soul, while the chewy fettuccine and tender chicken satisfy the taste buds. People love the versatility as it can be tweaked with different ingredients like mushrooms, broccoli or spinach. Moreover, it’s an excellent way to use leftover chicken and is easy to whip up, making it a favorite for busy weeknight dinners. Furthermore, it appeals to a wide range of age groups, from children to adults.

Why Is This Recipe Healthy?

Whole wheat fettuccine is used instead of regular pasta, which adds more fiber and nutrients. The choice of olive oil over butter is heart-friendly due to its monounsaturated fats. Using low-fat milk instead of heavy cream significantly reduces saturated fats, making it lighter. Chicken is a great source of lean protein. By incorporating vegetables, you’re adding vitamins and minerals. Additionally, using low-sodium chicken broth helps control salt intake.

Who Can Eat This Recipe?

This dish is suitable for people of all age groups. However, for those with dairy intolerance, lactose-free milk can be used, and for gluten sensitivities, gluten-free pasta is an option.

Enjoy the creamy, sumptuous Chicken Fettuccine Alfredo without the guilt. This healthier twist to a classic favorite is sure to become a staple in your kitchen. Buon Appetito!

Equipment

  • A large skillet or pan

  • A large pot for boiling pasta

  • A knife and cutting board

  • A wooden spoon or spatula

  • A cheese grater

Ingredients

  • 8 ounces whole wheat fettuccine

  • 2 boneless, skinless chicken breasts

  • Salt and pepper to taste

  • 2 tablespoons olive oil

  • 4 garlic cloves, minced

  • 1 cup low-fat milk

  • 1 cup low-sodium chicken broth

  • 1 cup grated Parmesan cheese

  • 1/4 cup chopped fresh parsley

  • 1 cup steamed broccoli (optional)

Instructions

1

Cook the whole wheat fettuccine according to the package instructions.

2

While pasta is cooking, season chicken breasts with salt and pepper.

3

In a large skillet, heat olive oil over medium heat, add chicken breasts and cook until they are golden brown and cooked through.

4

Remove chicken from skillet and let it rest before slicing it into strips.

5

In the same skillet, add minced garlic and cook until fragrant.

6

Add low-fat milk and chicken broth. Bring to a simmer.

7

Gradually add the grated Parmesan cheese, stirring continuously until the sauce thickens.

8

Add chopped parsley and stir. Optionally, add steamed broccoli or any other veggies.

9

Toss the cooked fettuccine and sliced chicken in the sauce until well coated.

10

Serve hot, garnished with additional parsley or Parmesan.

Notes

Seasoning the chicken properly is critical for flavor. Be generous with herbs like rosemary or thyme. When preparing the Alfredo sauce, opt for low-fat milk instead of heavy cream to reduce the calorie content. Also, use freshly grated Parmesan as it melts better than pre-grated cheese. Adding steamed vegetables like broccoli can not only enhance the taste but also the nutritional value of the dish.
