  • 1 lb beef chuck, cubed

  • 2 cups mushrooms, sliced

  • 1 large onion, diced

  • 2 cloves garlic, minced

  • 2 medium carrots, peeled and diced

  • 1 cup frozen peas

  • 2 cups beef broth

  • 1/4 cup red wine (optional)

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 2 tbsp all-purpose flour

  • Salt and pepper to taste

  • Fresh thyme

  • 1 sheet of puff pastry

  • 1 egg (for egg wash)



Preheat your oven to 375°F (190°C).


In a large pan, heat olive oil and brown the beef on all sides. Remove and set aside.


In the same pan, add butter, onions, garlic, and carrots. Cook until softened.


Add mushrooms and cook until browned.


Stir in flour, then gradually add beef broth and red wine if using. Bring to a simmer.


Return the beef to the pan, add peas, thyme, salt, and pepper. Cook for 5 more minutes.


Roll out the puff pastry on a floured surface.
